Happy Cinco de Mayo!

These days, I am looking for any opportunity to celebrate. Tonight my family and I will be ordering take out from our favorite El Salvadorian restaurant down the street from us in the heart of Ashton, MD. We absolutely love this family-owned business. They are such hard-working, good people and their food is delicious. Feels good to support local small businesses during these times. So important now more now than ever. 

I will also be making my favorite Margherita on the rocks drink (recipe below). I haven't had any alcohol in 2 weeks as a part of my Get Lean During Quarantine Challenge. I am making an exception for one drink this month... guilt-free! It will probably put me right to bed. :-)

On a personal note...

Garden is coming along and everything is growing nicely. I planted some elephant ear bulbs last week that a neighbor that moved away gave us. First time planting them in the ground, so hopefully, they will thrive and grow. I wanted to fill in a few areas of our property with meadow gardens, so I ordered some wildflower seeds a month ago from American Meadows in Vermont and they arrived yesterday. So I know what I'll be doing this weekend!

My youngest son, Ben, has really been into riding his trick scooter and has been adamant about building ramps, jumps, and rails. I've had fun helping him with that. We practically have a skate park in our driveway. He loves it and it's a great way for him to stay active outdoors.

On the health front... week 2 of my 30 Day Get Lean During Quarantine challenge is done and I'm starting to see some results! (see body measurements below). The big difference between the 1st week (Detox Phase) and the remaining 3 weeks (Fat Burning Phase) is the addition of an exercise program (cardio and resistance training) and an increase of protein intake. I exercised 6 out of 7 days last week. My energy is up and I can feel that I'm already building some muscle. Still eating a ton of vegetables and the protein shakes have been a great addition to my snacks. Again, I'm not overly focused on the weight, but rather on how I feel.

CLASSIC MARGARITA

INGREDIENTS

1 OZ Cointreau
2 OZ Blanco Tequila (Don Julio Silver is my preference)
1 OZ Fresh Lime Juice

Combine all ingredients in a shaker and add ice.
Shake and strain into a salt-rimmed rocks glass.
Garnish with a lime wheel.
